Ingredients

2 cups semolina

1 cup all-purpose flour

1 cup sugar

1/2 cup ghee (clarified butter) or unsalted butter, melted

1 cup milk

1 teaspoon baking powder

1 teaspoon ground cardamom

1/2 teaspoon cinnamon

1/4 cup chopped walnuts or almonds (optional)

Honey or syrup (for drizzling)

Sesame seeds (for garnish)

Instructions

Preheat the oven: Set your oven to 350°F (175°C).

Mix dry ingredients: In a large mixing bowl, combine semolina, all-purpose flour, baking powder, ground cardamom, cinnamon, and sugar. Stir well to ensure even distribution.

Incorporate wet ingredients: Pour in the melted ghee and milk. Mix everything until a soft dough forms. If the dough is too dry, add a little extra milk, one tablespoon at a time.

Add nuts: If you're using nuts, fold in the chopped walnuts or almonds into the dough until evenly distributed.

Shape the dough: In a greased baking dish, spread the dough evenly, pressing it down to ensure it's compact. Use a knife to score the surface into diamond or square shapes for easy serving later.

Garnish: Sprinkle sesame seeds over the top for added flavor and texture.

Bake: Place the dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown.

Cool and slice: Once done, remove from the oven and let it cool for about 10 minutes. Then, cut through the score lines to serve into pieces.

Drizzle with honey: Before serving, drizzle the delicious Mekarkama with honey or syrup for an extra touch of sweetness.

Serve: Enjoy this delightful Palestinian treat warm or at room temperature!
