Ingredients

1 cup polenta (coarse cornmeal)

4 cups water or vegetable broth

1 teaspoon salt

2 tablespoons unsalted butter

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Freshly cracked black pepper to taste

Optional: herbs (like rosemary or thyme), sautéed mushrooms, or roasted vegetables for topping

Instructions

In a large saucepan, bring 4 cups of water (or vegetable broth) to a gentle boil over medium heat. Add the salt.

Once boiling, slowly whisk in the polenta, reducing the heat to low. Keep whisking to avoid clumping.

Continue to cook, stirring frequently, for about 30-40 minutes, or until the polenta is thick and creamy. It should pull away from the sides of the pan.

Remove from heat and stir in the butter and grated Parmesan cheese until fully melted and combined. Adjust seasoning with salt and freshly cracked black pepper to taste.

For added flavor, mix in your choice of fresh herbs. If desired, top with sautéed mushrooms or roasted vegetables before serving.

Serve immediately for a creamy dish, or spread the polenta in a greased dish to cool and set. Once firm, you can slice it for grilling or frying later on.
