Ingredients

1 loaf of brioche or challah bread, sliced (about 8-10 slices)

4 large eggs

2 cups whole milk

1 cup heavy cream

1 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

Pinch of salt

½ cup brown sugar (for topping)

Fresh berries (optional, for garnish)

Mint leaves (optional, for garnish)

Instructions

Prepare the Bread: In a large baking dish, arrange the slices of brioche or challah bread in a single layer. If necessary, you can cut the slices to fit.

Make the Custard: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and a pinch of salt until fully combined and smooth.

Combine: Pour the custard mixture over the arranged bread slices in the baking dish, ensuring every slice is generously soaked. You can gently press the bread down with a spatula to ensure it absorbs the mixture.

Cover & Refrigerate: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the bread to soak up the custard.

Preheat the Oven: The next day, preheat your oven to 350°F (175°C).

Bake: Remove the plastic wrap from the bread and sprinkle the brown sugar evenly over the top of the soaked bread. Bake for 40-45 minutes, or until the custard is set, and the top is golden brown and slightly caramelized.

Finish & Serve: Once baked, allow the French toast to cool for a few minutes. For extra caramelization, you can use a kitchen torch to brûlée the top layer of brown sugar. Serve warm, garnished with fresh berries and mint leaves if desired.
