1 1/2 cups mashed orange sweet potatoes (about 2 medium sweet potatoes)

1 cup orange juice (freshly squeezed preferred)

1/2 cup granulated sugar

1/4 cup brown sugar, packed

3 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 pre-made pie crust (9 inches)

Whipped cream (for serving, optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    Begin by cooking the sweet potatoes. Boil or steam the potatoes until fork-tender, about 20-25 minutes. Once cooked, drain, cool slightly, and then peel them. Mash until smooth. You should have about 1 1/2 cups.

      In a large mixing bowl, combine the mashed sweet potatoes, orange juice, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix thoroughly until smooth and well combined.

        Pour the sweet potato custard mixture into the pre-made pie crust, spreading it evenly.

          Bake the pie in the preheated oven for 45-50 minutes, or until the center is set and a toothpick inserted comes out clean.

            Remove the pie from the oven and let it cool on a wire rack for at least 1 hour. This cooling time helps the custard firm up.

              Once cool, slice the pie and serve with a dollop of whipped cream if desired.
