Ingredients
  

2 salmon fillets (6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup orzo pasta

2 cups chicken or vegetable broth

Zest and juice of 1 large lemon

1 cup spinach leaves

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

1/4 cup grated Parmesan cheese (optional)

Season the Salmon: Pat the salmon fillets dry with a paper towel. Season both sides with salt and pepper.

    Cook the Salmon: In a large skillet, heat olive oil over medium heat. Once hot, add the salmon fillets, skin-side down if they have skin. Cook for about 4-5 minutes until the skin is crispy and the salmon is golden. Flip the fillets gently and cook for an additional 3-4 minutes until the salmon is cooked through (internal temperature should reach 145°F). Remove the salmon from the skillet and place it on a plate. Cover loosely with foil to keep warm.

      Prepare the Orzo: In the same skillet, add the minced garlic and red pepper flakes (if using), sautéing for about 30 seconds until fragrant.

        Cook the Orzo: Add the orzo to the skillet, stirring to coat in the oil and garlic. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to a simmer, cover, and cook for about 8-10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.

          Add Lemon and Spinach: Once the orzo is cooked, stir in the lemon zest, lemon juice, and spinach. Cook for another 2 minutes until the spinach has wilted.

            Combine Ingredients: Gently lay the cooked salmon fillets on top of the orzo in the skillet. If desired, sprinkle with grated Parmesan cheese.

              Serve: Remove from heat and let sit for a minute. Garnish with fresh parsley and a few lemon slices if desired. Serve warm and enjoy!
