8 oz penne pasta

1 lb spicy Italian sausage, casings removed

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes (with juices)

2 cups chicken broth

1 tsp red pepper flakes (adjust to taste)

1 tsp dried oregano

1 tsp Italian seasoning

1/2 cup heavy cream

1 cup fresh spinach

Salt and pepper to taste

Olive oil for sautéing

Grated Parmesan cheese for serving

Heat the Pan: In a large pot or deep skillet, heat 1 tablespoon of olive oil over medium heat.

    Cook the Sausage: Add the spicy Italian sausage to the pan, breaking it up with a wooden spoon. Cook until browned, around 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the pan.

      Sauté Vegetables: In the same pot, add the diced onion, diced bell pepper, and minced garlic. Sauté for about 3-4 minutes until the vegetables are tender.

        Add Pasta & Liquids: Stir in the penne pasta, diced tomatoes (with juices), chicken broth, red pepper flakes, oregano, Italian seasoning, salt, and pepper. Bring the mixture to a boil.

          Cook the Pasta: Reduce heat to a simmer and cover the pot. Cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and almost all liquid is absorbed.

            Incorporate Cream and Spinach: Once the pasta is cooked, stir in the heavy cream and fresh spinach. Allow the spinach to wilt, stirring everything together until well combined.

              Final Touches: Add the cooked sausage back into the pot, mixing well. Adjust seasoning with more salt and pepper if necessary.
