1 lb boneless, skinless chicken breasts, diced

1 tbsp olive oil

4 cloves garlic, minced

1 medium onion, finely chopped

2 cups chicken broth

1 cup heavy cream

1 tbsp lemon zest

1/4 cup freshly squeezed lemon juice

2 cups refrigerated gnocchi

1 cup fresh spinach

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Chopped parsley for garnish (optional)

Sauté the Chicken: In a large pot over medium heat, add the olive oil. Once hot, add the diced chicken. Season with salt and pepper, then cook for about 5-7 minutes, until golden and cooked through. Remove the chicken from the pot and set aside.

    Cook Aromatics: In the same pot, add chopped onions and cook for around 3 minutes or until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Combine the Base: Pour in the chicken broth and heavy cream, stirring to combine. Add lemon zest and lemon juice to create a refreshing flavor.
