One Pot French Onion Pasta

8 oz (about 225g) uncooked linguine or spaghetti

3 large onions, thinly sliced

4 cloves garlic, minced

3 tbsp unsalted butter

1 tbsp olive oil

1 tsp sugar

4 cups (950ml) low-sodium beef broth

1 cup (240ml) dry white wine (or extra broth)

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper, to taste

1 cup (about 100g) grated Gruyère cheese

1/2 cup (about 50g) grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Onions: In a large pot or Dutch oven, heat the butter and olive oil over medium heat. Add the thinly sliced onions and sauté for about 10-12 minutes, stirring occasionally, until they’re caramelized and golden brown.

    Add Garlic and Sugar: Stir in the minced garlic and sugar. Cook for another 2-3 minutes until the garlic is fragrant and the mixture is a deep golden color.

      Deglaze the Pot: Pour in the white wine (or additional beef broth) to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for about 3 minutes until the wine is reduced slightly.

        Combine Ingredients: Add the uncooked pasta to the pot along with the beef broth, thyme, rosemary, salt, and pepper. Stir to combine all the ingredients.

          Cook the Pasta: Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for about 10-12 minutes, or until the pasta is cooked al dente, stirring occasionally to prevent sticking.

            Add Cheese: Once the pasta is cooked, stir in the Gruyère and Parmesan cheese until melted and creamy. If the mixture is too thick, you can add a splash of beef broth to loosen it up.
