Ingredients

4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 cup jasmine rice, rinsed

2 cups chicken broth

1/2 cup honey BBQ sauce (store-bought or homemade)

1 bell pepper, diced (any color)

1 small onion, chopped

2 cloves garlic, minced

1 cup frozen corn

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

Chopped green onions, for garnish

Instructions

Prep the Chicken: Season the chicken thighs with salt, pepper, smoked paprika, and garlic powder. Set aside.

Sauté the Aromatics: In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper. Sauté until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Brown the Chicken: Push the vegetables to one side of the pan and add the seasoned chicken thighs. Sear them for about 4-5 minutes on each side until they develop a golden brown crust.

Combine Rice and Sauce: Pour the rinsed jasmine rice over the chicken and vegetable mixture. Pour in the chicken broth and drizzle the honey BBQ sauce on top. Do not stir; allow the mixture to come to a simmer.

Cook the Rice: Once it starts simmering, reduce the heat to low, cover with a lid, and let it cook for 20-25 minutes. During the last 5 minutes of cooking, add the frozen corn on top without stirring.

Check for Doneness: After 25 minutes, remove the lid. Make sure that the rice is tender and has absorbed all the liquid. If the rice is still firm, cover and cook for an additional 5 minutes.

Shred the Chicken: Once the chicken is fully cooked, use two forks to shred the chicken thighs into bite-sized pieces and mix them back in with the rice and vegetables.

Serve: Garnish with chopped green onions for a fresh finish. Enjoy your delicious One-Pan Honey BBQ Chicken Rice!
