1 cup creamy peanut butter

1 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1 cup Biscoff cookie crumbs (plus extra for topping)

A pinch of salt

1/2 cup semi-sweet chocolate chips (optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix the wet ingredients: In a large mixing bowl, combine the creamy peanut butter, brown sugar, egg, and vanilla extract. Mix well until smooth.

      Combine dry ingredients: Add the baking soda, Biscoff cookie crumbs, and salt to the bowl. Stir until the mixture is well combined. If using, fold in the chocolate chips for a delightful surprise.

        Form the cookies: Using a tablespoon or a medium cookie scoop, portion out the dough and roll it into balls. Place them on the prepared baking sheet, leaving a little space between each.
