Ingredients

3 large eggs

2 tablespoons milk or cream

1/4 cup shredded cheese (cheddar, feta, or your choice)

2 tablespoons mixed fresh herbs (chives, parsley, and basil)

Salt and pepper to taste

1 tablespoon butter or olive oil

Optional toppings: diced tomatoes, sautéed mushrooms, or avocado slices

Instructions

In a mixing bowl, whisk together the eggs, milk (or cream), salt, and pepper until well combined and slightly frothy.

Stir in the mixed herbs and cheddar cheese, ensuring an even distribution.

Heat a non-stick skillet over medium heat and add the butter or olive oil, swirling it to coat the bottom evenly.

Once the butter is melted and bubbly (but not browned), pour the egg mixture into the pan.

Let the eggs cook undisturbed for about 1-2 minutes until the edges start to set.

Gently lift the edges of the omelette with a spatula, allowing uncooked eggs to flow to the edges.

Once the top is still slightly runny but the edges are set, carefully fold the omelette in half using the spatula.

Cook for an additional 1-2 minutes until the cheese is melted and the inside is cooked, but still creamy.

Slide the omelette onto a plate and serve immediately, garnishing with your choice of optional toppings.
