1 cup crushed pineapple (drained)

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup crushed graham crackers (plus extra for topping)

1/2 cup unsweetened coconut flakes (toasted)

Fresh pineapple slices and mint leaves for garnish

Instructions
 

Prepare the Base: In a medium bowl, mix the crushed graham crackers with melted butter until they resemble wet sand. Press this mixture firmly into the bottom of a 9-inch square dish to form the crust. Set aside.

    Make the Cream Mixture: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract. Mix until well combined and fluffy.

      Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

        Add Pineapple: Carefully fold in the drained crushed pineapple into the cream mixture until it is evenly distributed.

          Layer the Dessert: Spread half of the pineapple cream mixture over the crust. Sprinkle half of the toasted coconut flakes on top. Add the remaining cream mixture, and finish with a layer of crushed graham crackers and the rest of the coconut flakes.

            Chill: Cover the dessert with plastic wrap and refrigerate for at least 4 hours or until set.

              Serve: Cut into squares and garnish each piece with fresh pineapple slices and a mint leaf before serving.
