Ingredients
  

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/4 cup granulated sugar

8 oz cream cheese, softened

1 cup pumpkin puree (not pumpkin pie filling)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1 cup whipped cream (for topping)

1/4 cup crushed pecans (optional, for garnish)

Instructions
 

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until the mixture resembles wet sand.

    Press the Crust: Divide the mixture evenly into mini cupcake liners placed in a muffin tin. Press down firmly with the back of a spoon or your fingers to create a solid base. Chill in the refrigerator for about 15 minutes to set.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

        Add Pumpkin: Add the pumpkin puree, powdered sugar, vanilla extract, ground cinnamon, nutmeg, and ground ginger to the cream cheese. Beat until all ingredients are well combined and fluffy.

          Fill the Cups: Remove the crusts from the fridge and carefully spoon the pumpkin cheesecake filling on top of each crust, smoothing the tops with a spatula.

            Chill: Refrigerate the mini cheesecakes for at least 2 hours, or until they are set.

              Serve: Before serving, top each cheesecake with a dollop of whipped cream and a sprinkle of crushed pecans if desired. Enjoy these delightful treats chilled!
