Muffin Tin Breakfast – Croque Madame Toastie Cups

Ingredients
  

6 slices of rustic bread (like sourdough or whole grain)

6 slices of ham (preferably black forest or honey-glazed)

1 cup grated Gruyère cheese (or Swiss cheese)

4 large eggs

1 cup milk (whole or low-fat)

2 tablespoons Dijon mustard

1 tablespoon unsalted butter, melted

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Grease a standard muffin tin with cooking spray or butter to prevent sticking.

      Use a rolling pin to flatten each slice of bread gently. This will help them fit into the muffin cups.

        Cut each flattened slice into a circle slightly larger than the diameter of your muffin tin cups. You can use a cookie cutter or a glass for this.

          Place one bread circle into each muffin tin cup, pressing gently to fit the shape.

            Spread a thin layer of Dijon mustard on the inside of each bread cup.

              Layer a slice of ham into each bread cup, followed by a generous amount of grated Gruyère cheese.

                In a mixing bowl, whisk together the eggs, milk, melted butter, salt, and pepper until combined.

                  Pour the egg mixture gently into each cup, filling just until the bread cups are full (do not overfill).

                    Sprinkle any remaining cheese on top of the egg mixture.

                      Bake in the preheated oven for about 20-25 minutes, or until the egg is set and the tops are lightly golden.

                        Once done, remove from oven and let them cool for a few minutes before carefully lifting the cups out of the tin.

                          Serve warm, garnished with fresh chives or parsley if desired.
