Ingredients

3 large eggs

1/4 cup fresh mozzarella cheese, diced

2 tablespoons fresh basil, chopped

1 tablespoon grated Parmesan cheese

1 tablespoon butter

Salt and pepper to taste

Cherry tomatoes, halved (for garnish)

Instructions

Beat the Eggs: In a medium mixing bowl, crack the eggs and whisk them together until well combined. Add a pinch of salt and pepper to taste.

Prepare the Pan: Heat a non-stick skillet over medium heat and melt the butter, ensuring it coats the bottom of the pan.

Cook the Eggs: Pour the beaten eggs into the skillet and let them cook undisturbed for about 1-2 minutes, or until the edges start to set.

Add Cheese and Basil: Sprinkle the diced mozzarella, Parmesan cheese, and chopped basil evenly over one half of the omelet.

Fold the Omelet: Once the eggs are mostly set but still slightly runny on top, carefully fold the omelet in half using a spatula, covering the cheese and basil.

Finish Cooking: Cook for another 1-2 minutes until the cheese is melted and the omelet is cooked through. Adjust the cooking time based on your preferred omelet texture (soft or firm).

Plating: Gently slide the omelet onto a plate and garnish with halved cherry tomatoes for a fresh touch.

Serve: Slice in half and serve hot for a mouthwatering breakfast or brunch experience.
