8 large eggs

1 cup milk

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1/2 cup bell peppers, diced (mix of colors)

1 small onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

Salt and pepper to taste

1 tablespoon olive oil

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or oven-safe skillet with olive oil.

    In a large mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.

      Heat a skillet over medium heat and add a tablespoon of olive oil. Sauté the onion and bell peppers until they are softened, about 5 minutes.

        Add the chopped spinach and halved cherry tomatoes to the skillet, stirring until the spinach is wilted, about 2 minutes.

          Remove the skillet from heat and stir in the feta cheese and fresh basil.

            Pour the egg mixture over the sautéed vegetables in the skillet, ensuring an even distribution.

              Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the frittata is set and lightly golden on top. A toothpick inserted in the center should come out clean.

                Allow the frittata to cool slightly before slicing. Serve warm or at room temperature, garnished with extra basil if desired.
