Moroccan Spiced Chicken

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

1 teaspoon ground cinnamon

1 teaspoon turmeric

1 teaspoon cayenne pepper (adjust to taste)

3 cloves garlic, minced

1 tablespoon honey

Juice of 1 lemon

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

1 cup chicken broth

1 cup dried apricots, chopped

1 cup chickpeas, drained and rinsed

Instructions
 

In a large bowl, combine olive oil, cumin, coriander, paprika, cinnamon, turmeric, cayenne pepper, minced garlic, honey, lemon juice, salt, and pepper. Mix to form a marinade.

    Add the chicken thighs to the bowl, ensuring they are well-coated with the spice mixture. Cover and marinate in the refrigerator for at least 1 hour (or overnight for more flavor).

      Preheat your oven to 400°F (200°C).

        In a large oven-safe skillet, arrange the marinated chicken thighs skin-side up. Pour chicken broth over the chicken, and scatter chopped dried apricots and chickpeas around them.

          Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy.

            Optional: For extra crispiness, broil on high for an additional 3-5 minutes.

              Once cooked, remove from the oven and let rest for a few minutes. Garnish with fresh cilantro or parsley before serving.
