2 lbs beef chuck, cut into 1-inch cubes

1 medium onion, finely chopped

2 cloves garlic, minced

1 large butternut squash, peeled and diced

1 can (14 oz) diced tomatoes

2 cups beef broth

2 tablespoons olive oil

2 teaspoons ground cumin

2 teaspoons ground cinnamon

1 teaspoon ground ginger

1 teaspoon turmeric

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust for heat preference)

1/2 cup dried apricots, chopped

1/2 cup slivered almonds, toasted

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Sear the Beef: In a skillet, heat the olive oil over medium-high heat. Add the beef chunks and sear until browned on all sides. Work in batches if needed to avoid overcrowding. Once browned, transfer the beef to the slow cooker.

    Sauté the Aromatics: In the same skillet, add the chopped onions and garlic. Sauté for about 5 minutes until the onions are soft and translucent.

      Combine the Ingredients: Add the sautéed onions and garlic to the slow cooker with the beef. Layer the diced butternut squash on top.
