1 pound ground turkey

1 cup breadcrumbs (preferably whole wheat)

1/2 cup finely chopped onion

1/2 cup grated carrots

1/2 cup diced bell pepper (any color)

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1/4 cup milk (or vegetable broth for a lighter option)

2 tablespoons Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup ketchup (for topping)

1 tablespoon brown sugar (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Vegetables: In a skillet over medium heat, sauté the chopped onion, diced bell pepper, and grated carrots for about 5 minutes, just until they soften. Remove from heat and let cool slightly.

      Mix the Meatloaf: In a large mixing bowl, combine the ground turkey, sautéed vegetables, breadcrumbs, chopped parsley, minced garlic, egg, milk, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix everything together until well combined, but do not over-mix.

        Shape the Mixture: Shape the meat mixture into a loaf and place it in the center of a greased baking dish or on a lined baking sheet.

          Prepare the Topping: In a small bowl, mix the ketchup and brown sugar together (if using). Spread the mixture evenly over the top of the meatloaf.

            Bake the Meatloaf: Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C). Let it rest for about 10 minutes before slicing to ensure it stays moist.
