1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons pure vanilla extract

2 ½ cups all-purpose flour

1 cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup mint chocolate chips

½ teaspoon peppermint extract

A pinch of sea salt (for topping)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Cream the Butters and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).

      Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract and peppermint extract, until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.

          Mix Dry with Wet Ingredients: Gradually add the dry ingredient mixture to the creamed butter and sugar mixture, mixing until just combined.

            Fold in Mint Chips: Gently fold in the mint chocolate chips until evenly distributed throughout the dough.

              Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
