Ingredients
  

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons sugar

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 ripe bananas, sliced

1 box (3.4 oz) instant vanilla pudding mix

2 cups milk

Optional: chocolate shavings or nuts for garnish

Instructions
 

Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom and sides of mini tart pans or muffin tins to form a crust. Chill in the refrigerator for about 30 minutes to set.

    Make the Pudding: In a large bowl, whisk together the instant vanilla pudding mix and milk until it thickens (about 2 minutes). Set aside.

      Whip the Cream: In another bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. Gently fold half of the whipped cream into the prepared pudding to create a light and fluffy filling.

        Assemble the Mini Pies: After the crusts have set, add a layer of banana slices to the bottom of each crust. Spoon the pudding mixture over the bananas, filling each crust generously.

          Top with Whipped Cream: Using the remaining whipped cream, dollop or pipe it on top of each mini pie.

            Garnish: If desired, sprinkle with chocolate shavings or crushed nuts for a bit of crunch.

              Chill: Place the mini pies in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
