Mexican Chicken Pinwheels

Ingredients
  

2 cups cooked chicken, shredded

1 cup cream cheese, softened

1 cup Mexican blend cheese, shredded

1/2 cup canned black beans, drained and rinsed

1/2 cup corn (fresh or frozen, thawed)

1/4 cup fresh cilantro, chopped

1 jalapeño, finely chopped (seeds removed for less heat)

1 tablespoon taco seasoning

4 large flour tortillas (10-inch)

1/2 cup salsa

Optional: additional taco seasoning for garnish

Instructions
 

In a large mixing bowl, combine the shredded chicken, cream cheese, Mexican blend cheese, black beans, corn, cilantro, jalapeño, and taco seasoning. Mix until all ingredients are well incorporated.

    Spread a generous 1/4 of the chicken mixture evenly over each tortilla, leaving a small border around the edges.

      Starting from one edge, tightly roll the tortilla over the filling, making sure to keep it as tight as possible without squeezing the filling out.

        Once rolled, place seam-side down on a cutting board. Use a sharp knife to slice each tortilla into pinwheels about 1-inch thick.

          If desired, serve pinwheels with salsa on the side for dipping and sprinkle extra taco seasoning over the top for extra flavor.

            Arrange the pinwheels on a serving platter and enjoy!
