Mexican Breakfast Tacos (Chorizo and Egg)

Ingredients
  

1 lb chorizo sausage, casings removed

6 large eggs

1 small onion, finely chopped

1 bell pepper (red or green), diced

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

8 small corn or flour tortillas

1 avocado, sliced

Salt and pepper, to taste

Hot sauce (optional) for serving

Lime wedges, for garnish

Instructions
 

Cook the Chorizo: In a large skillet over medium heat, add the chorizo. Cook, breaking it apart with a spatula, for about 5-7 minutes or until browned and fully cooked. Remove from skillet and set aside, draining excess fat if necessary.

    Sauté Veggies: In the same skillet, add the chopped onion and diced bell pepper. Cook for about 3-4 minutes until softened and slightly caramelized.

      Scramble the Eggs: In a bowl, whisk the eggs together and season with salt and pepper. Pour the eggs into the skillet with the sautéed vegetables. Stir gently, cooking until the eggs are just set, about 3-4 minutes.

        Combine: Add the cooked chorizo back into the skillet with the scrambled eggs and vegetables. Stir in the shredded cheese until melted and evenly combined.

          Warm the Tortillas: In a separate pan, warm the tortillas over medium heat for about 30 seconds on each side until soft and pliable.

            Assemble the Tacos: Spoon the chorizo and egg mixture onto each tortilla. Top with fresh cilantro, avocado slices, and any additional toppings you prefer, such as hot sauce.

              Serve: Squeeze fresh lime juice over the tacos and serve immediately with extra lime wedges on the side.
