Ingredients

1 ripe cantaloupe or honeydew melon, sliced

1 cup fresh burrata cheese

4 slices of artisanal bread (like sourdough or ciabatta)

2 tablespoons extra virgin olive oil

2 tablespoons honey

1 teaspoon red chili flakes (adjust to taste)

Fresh mint leaves, for garnish

Sea salt, to taste

Freshly cracked black pepper, to taste

Instructions

Prepare the Chili Honey: In a small bowl, mix the honey with red chili flakes. Let it sit for about 10-15 minutes to infuse the flavors.

Toast the Bread: Preheat a grill pan or a skillet over medium heat. Drizzle the slices of bread with olive oil on both sides. Toast each slice for about 2-3 minutes on each side or until they are golden brown and crispy. Remove from heat.

Assemble the Toast: On each slice of toasted bread, generously scoop the burrata cheese, allowing it to spill slightly over the edges.

Add Melon: Strategically place the melon slices on top of the burrata. You can fan them out or layer them for visual appeal.

Drizzle the Chili Honey: Spoon a generous drizzle of the chili honey over the top of the melon and burrata.

Season and Garnish: Sprinkle with sea salt and freshly cracked black pepper. Add fresh mint leaves for a pop of color and a refreshing finish.

Serve: Arrange the toasts on a serving platter and enjoy immediately while the toast is warm and the burrata is creamy.
