Mediterranean Falafel ; Feta Stuffed

1 cup dried chickpeas (soaked overnight)

1 small onion, chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup all-purpose flour (more if needed)

4 ounces feta cheese, crumbled

1/2 cup breadcrumbs (optional for texture)

Oil for frying (e.g., vegetable or olive oil)

For Serving:

Pita bread

Fresh veggies (lettuce, tomatoes, cucumbers)

Tahini sauce or tzatziki

Instructions
 

Prepare the Chickpeas: Drain the soaked chickpeas and rinse them under cold water.

    Make the Falafel Mix: In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, salt, black pepper, and flour. Pulse until a coarse mixture forms, ensuring not to over-process—small chunks add texture.

      Chill the Mixture: Transfer the falafel mixture to a bowl, cover, and refrigerate for at least 30 minutes to firm up.

        Stuff with Feta: Take a tablespoon of the falafel mix and flatten it in your palm. Place a teaspoon of crumbled feta in the center and fold the mix around it to form a ball. Repeat with the remaining mixture.

          Heat the Oil: In a deep frying pan, heat about an inch of oil over medium-high heat until it reaches 350°F (175°C).

            Fry the Falafel: Carefully add the falafel balls, cooking in batches for about 3-4 minutes on each side, or until golden brown. Use a slotted spoon to remove them from the oil and drain on paper towels.

              Serve: Warm the pita bread and stuff it with the feta-stuffed falafel and your choice of fresh veggies. Drizzle with tahini sauce or tzatziki for added flavor.
