Meatloaf Cupcakes

Ingredients
  

1 lb ground beef (or turkey)

1 cup breadcrumbs (preferably whole wheat)

1/2 cup grated Parmesan cheese

1/2 cup milk

1/2 cup finely chopped onion

2 large eggs

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup ketchup (for topping)

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with cupcake liners for easy removal.

    Mix the Ingredients: In a large bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, milk, chopped onion, eggs, minced garlic, Worcestershire sauce, oregano, salt, and black pepper. Mix well with your hands or a spatula until all ingredients are fully incorporated.

      Shape the Mixture: Scoop the meat mixture into the prepared muffin tin, filling each cup to the top and gently pressing down to create a nice shape.

        Add the Topping: Spoon about a tablespoon of ketchup onto the top of each meatloaf cupcake, spreading it evenly.

          Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the meatloaf is cooked through and the tops are slightly caramelized and firm.

            Cool & Garnish: Once cooked, remove the cupcake pan from the oven and let the meatloaf cupcakes cool for about 5 minutes. Carefully remove them from the pan and place on a serving platter. Garnish with freshly chopped parsley if desired.
