4 cups mashed potatoes (homemade or store-bought)

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn, etc.)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ cup green onions, chopped (for garnish)

1 cup breadcrumbs (optional, for topping)

2 tablespoons butter, melted (optional, for breadcrumbs)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.

      Layer the Casserole: In a greased 9x13 inch baking dish, spread the chicken mixture evenly over the bottom of the dish.

        Add the Mashed Potatoes: Carefully spread the mashed potatoes over the chicken layer, smoothing them out to create an even layer.

          Add Cheese: Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.

            Breadcrumb Topping (Optional): If using, mix the breadcrumbs with the melted butter and sprinkle over the cheese layer for a crispy topping.

              Bake the Casserole: Place the casserole in the oven and bake for 30-35 minutes, or until the cheese is bubbly and the casserole is heated through.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Before serving, garnish with chopped green onions.
