2 cups mashed potatoes (prepared and cooled)

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon

1/4 cup chopped green onions (optional)

1/2 cup all-purpose flour

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs (for coating)

Oil for frying (vegetable or canola)

Instructions
 

Combine Ingredients: In a large mixing bowl, combine the cooled mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions (if using), garlic powder, onion powder, salt, and pepper.

    Add Egg and Flour: Beat the egg and add it to the potato mixture along with the flour. Mix until everything is well combined, and the mixture holds together.

      Shape the Cakes: Using your hands, shape the mixture into small cakes (about the size of the palm of your hand) and place them on a parchment-lined baking sheet.

        Coat with Breadcrumbs: Roll each cake in breadcrumbs to coat them evenly, pressing gently to ensure the breadcrumbs stick.

          Heat Oil: In a large skillet, heat about 1/4 inch of oil over medium heat until hot.

            Fry the Cakes: Carefully place a few potato cakes into the hot oil (don’t overcrowd the skillet) and fry for about 3-4 minutes on each side, or until they are golden brown and crispy.

              Drain Excess Oil: Once fried, remove the cakes from the skillet and let them drain on paper towels to remove excess oil.
