2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

½ cup heavy cream

½ cup chicken broth

1 cup spinach leaves

½ cup grated Parmesan cheese

8 oz fettuccine or pasta of choice

Fresh basil, for garnish

Cook the Pasta: Begin by boiling a pot of salted water. Cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let it rest before slicing.

      Sauté the Vegetables: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and Italian seasoning, cooking until the tomatoes start to burst (about 3-4 minutes).

        Make the Sauce: Reduce the heat to medium, and pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for 2-3 minutes until slightly thickened.
