Mamounia (Ma'Mounia); Semolina Pudding

1 cup semolina

4 cups milk (can use almond or coconut milk for a twist)

1 cup sugar (adjust based on your sweetness preference)

½ cup butter (or ghee for a richer flavor)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

¼ teaspoon salt

Chopped nuts (almonds, pistachios) for garnish

Optional: dried fruits (like raisins or apricots) for extra texture

Instructions
 

Prepare the Base: In a large saucepan over medium heat, melt the butter. Once melted, add the semolina and toast it lightly, stirring constantly until it turns golden brown (about 3-5 minutes).

    Create the Mixture: Gradually pour in the milk while stirring continuously to prevent lumps from forming. Keep stirring until the semolina absorbs the milk and the mixture thickens (this should take about 10-15 minutes).

      Sweeten It Up: Once thickened, reduce the heat and mix in the sugar, vanilla extract, ground cinnamon, and salt. Stir well until everything is incorporated and the sugar has dissolved.

        Chill and Set: Pour the mixture into a greased mold or individual serving dishes. Use a spatula to smooth the top. Allow the pudding to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until fully set.

          Garnish and Serve: Once the Mamounia is chilled, run a knife around the edges of the mold if using one to help release it. Invert onto a serving platter or serve directly from individual dishes. Garnish with chopped nuts and dried fruits as desired.
