1 cup semolina

1/2 cup sugar (adjust to taste)

4 cups whole milk

1/4 cup butter (unsalted)

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 cup chopped almonds (or nuts of choice)

A pinch of salt

Additional cinnamon and sugar for garnish

Honey (optional, for drizzling)

Prepare the Base: In a medium saucepan, start by combining the milk, butter, and a pinch of salt over medium heat. Stir occasionally until the butter melts and the milk begins to warm.

    Incorporate Semolina: Gradually whisk in the semolina to avoid lumps. Keep whisking continuously for about 10 minutes until the mixture thickens and bubbles slightly.

      Add Sweetness and Flavor: Once thickened, stir in the sugar, ground cinnamon, and vanilla extract. Continue to cook for another 5 minutes, stirring frequently, until the mixture becomes creamy and smooth.

        Add Nuts: Remove from heat and gently fold in the chopped almonds. This adds a delightful crunch to the pudding.

          Set the Pudding: Pour the mixture into a greased rectangular dish or individual serving bowls. Smooth the top with a spatula, then cover with plastic wrap and let it cool for at least 30 minutes at room temperature, or refrigerate for a firmer consistency.

            Serve and Garnish: Before serving, sprinkle additional cinnamon and sugar on top. Drizzle with honey if desired. Cut into squares or serve in bowls.
