Ingredients
  

For the Maamoul:

3 cups all-purpose flour

1 cup semolina

1 cup unsalted butter, melted

1/2 cup powdered sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup warm milk

1/2 teaspoon vanilla extract

1 cup finely chopped pistachios

For the Ashta (Cream):

2 cups whole milk

1/2 cup heavy cream

1/4 cup cornstarch

1/2 cup sugar

1/2 teaspoon vanilla extract

A pinch of rose water (optional)

For Garnishing:

Extra chopped pistachios

Powdered sugar for dusting

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the all-purpose flour, semolina, powdered sugar, ground cinnamon, and salt.

      - Pour in the melted butter and mix until the mixture resembles coarse crumbs.

        - In a separate bowl, mix the warm milk and vanilla extract and gradually add it to the flour mixture, kneading until a soft dough forms. If the dough is too dry, add a little more milk.

          Shape the Maamoul:

            - Allow the dough to rest for about 30 minutes, covered with a damp cloth.

              - Preheat your oven to 350°F (175°C).

                - Take a small piece of dough (about the size of a walnut), and flatten it in your palm. Place a teaspoon of chopped pistachios in the center and wrap the dough around the filling, sealing it well.

                  - Shape the filled dough into balls or use a Maamoul mold for intricate designs.

                    Bake the Maamoul:

                      - Place the shaped Maamoul on a lined baking sheet, spacing them apart. Bake for 15-20 minutes or until they are lightly golden.

                        - Allow them to cool on the tray for a few minutes before transferring to a wire rack.

                          Make the Ashta (Cream):

                            - In a saucepan, combine the whole milk, heavy cream, and sugar. Bring it to a simmer over medium heat.

                              - In a separate bowl, mix the cornstarch with a little cold water to create a slurry. Gradually add this to the simmering milk while stirring constantly.

                                - Cook for about 3-5 minutes, or until the mixture thickens. Stir in the vanilla extract and a pinch of rose water if desired. Remove from heat and let cool.

                                  Assemble the Maamoul:

                                    - Once the Maamoul has cooled, drizzle with Ashta cream or serve it on the side.

                                      - Garnish with extra chopped pistachios and a light dusting of powdered sugar.

                                        Serve:
