For the Crust:

1 ½ cups pistachio nuts (unsalted)

1 cup graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

For the Filling:

16 oz cream cheese, softened

1 cup sour cream

¾ cup sugar

3 large eggs

Zest of 1 lemon

Zest of 1 lime

¼ cup freshly squeezed lemon juice

¼ cup freshly squeezed lime juice

1 cup cherries, pitted and chopped (fresh or frozen)

For the Topping:

1 cup whipped cream

½ cup cherries, halved (for garnish)

¼ cup chopped roasted pistachios (for garnish)

Zest of 1 lime (for garnish)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a food processor, pulse pistachio nuts until finely ground. Mix with graham cracker crumbs and sugar in a bowl.

        - Stir in melted butter until the mixture resembles wet sand.

          - Press the crust mixture into the bottom of a 9-inch springform pan. Make sure to pack it firmly.

            - Bake for 10 minutes, then remove and let cool while preparing the filling.

              Make the Filling:

                - In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until creamy and smooth.

                  - Add sour cream, eggs, lemon zest, lime zest, lemon juice, and lime juice. Mix until well combined and fluffy.

                    - Gently fold in the chopped cherries, ensuring they are evenly distributed throughout the mixture.

                      Combine and Bake:

                        - Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

                          - Bake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.

                            - Turn off the oven and crack the door open a few inches, allowing the cheesecake to cool slowly for 1 hour.

                              Chill:

                                - Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, preferably overnight, to set completely.

                                  Prepare the Topping:
