Low Carb Chicken Lettuce Wraps

1 lb ground chicken

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 small red bell pepper, diced

1 small carrot, grated

3 green onions, sliced (reserve some for garnish)

3 tablespoons low-sodium soy sauce or coconut aminos

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon chili paste (adjust to taste)

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated

Optional toppings: chopped cilantro, crushed peanuts, lime wedges

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the ground chicken and cook for about 5-7 minutes, breaking it up with a spatula until it's browned and cooked through.

    Add Aromatics: Stir in the minced garlic and grated ginger, and sauté for another minute until fragrant.

      Vegetables: Add the diced bell pepper, grated carrot, and sliced green onions to the skillet. Stir-fry for about 3-4 minutes until the vegetables are slightly tender.

        Seasoning: In a small bowl, mix together the soy sauce (or coconut aminos), rice vinegar, sesame oil, and chili paste. Pour this mixture over the chicken and vegetable mixture in the skillet. Stir well to combine and let it cook for an additional 2-3 minutes, allowing the flavors to meld. Adjust salt and pepper to taste.

          Assemble Wraps: Remove the skillet from heat. Spoon the chicken mixture into the lettuce leaves, creating little wraps.

            Garnish: Top each wrap with reserved green onions, chopped cilantro, and crushed peanuts for an extra crunch. Serve with lime wedges on the side for a refreshing squeeze.
