Ingredients

2 boneless, skinless chicken breasts

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup all-purpose flour

2 large eggs, beaten

Salt and pepper to taste

Cooking oil (for frying)

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken: In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour (or up to overnight for maximum flavor).

Prepare the Breading: In a shallow dish, mix together the panko breadcrumbs and grated Parmesan cheese. In another dish, add the all-purpose flour seasoned with a pinch of salt and pepper. In a third dish, beat the eggs.

Coat the Chicken: Remove the chicken from the marinade. Dredge each piece in the flour mixture, shaking off excess. Next, dip the chicken into the beaten eggs, allowing the excess to drip off. Finally, coat the chicken in the Parmesan and panko mixture, pressing slightly to adhere the breadcrumbs well to the chicken.

Fry the Chicken: In a large skillet, heat about 1/2 inch of cooking oil over medium heat. Once the oil is hot (about 350°F), carefully place the breaded chicken breasts in the skillet. Fry for about 5-6 minutes on each side or until golden brown and cooked through (internal temperature should read 165°F).

Drain and Serve: Remove the chicken from the skillet and place it on a paper towel-lined plate to drain excess oil. Let it rest for a few minutes.

Garnish and Enjoy: Serve hot, garnished with fresh chopped parsley. Pair with your favorite sides like mashed potatoes, roasted vegetables, or a simple salad for a complete meal.
