3 large russet potatoes, washed and cubed

2 cups cooked chicken, shredded or diced

1 cup sour cream

1 cup cheddar cheese, shredded, plus extra for topping

1 cup milk

1/2 cup green onions, sliced

1/2 cup crispy bacon bits

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon olive oil

1/2 teaspoon paprika (optional for extra spice)

Instructions
 

Preheat your oven to 375°F (190°C).

    Prepare the potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 10-15 minutes. Drain and set aside.

      Make the mixture: In a large mixing bowl, combine the cooked chicken, sour cream, milk, garlic powder, onion powder, and paprika (if using). Mix until well combined. Season with salt and pepper to taste.

        Compile the casserole: In a large greased casserole dish, layer half of the cooked potatoes at the bottom. Pour half of the chicken mixture over the potatoes. Sprinkle half of the cheddar cheese, half of the green onions, and half of the bacon bits over the top. Repeat the layers with the remaining ingredients.

          Top off the casserole: Finish with a generous layer of remaining cheddar cheese and sprinkle with additional green onions and bacon bits for garnish.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Serve: Let it cool slightly before serving. Garnish with any extra green onions or bacon bits if desired. Enjoy your hearty and comforting casserole!
