1 pound of chicken liver, cleaned and trimmed

1 medium onion, finely chopped

2 cloves of garlic, minced

1 tablespoon of fresh thyme leaves (or 1 teaspoon dried thyme)

4 tablespoons of unsalted butter, divided

1 tablespoon of Dijon mustard

1-2 tablespoons of heavy cream (optional for creaminess)

Salt and pepper, to taste

4 slices of crusty bread (like sourdough or ciabatta)

A handful of fresh arugula or spinach

Pickled jalapeños (optional, for a spicy kick)

Instructions
 

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and garlic, sautéing until they are translucent and soft (about 5-7 minutes).

    Add the cleaned chicken livers to the skillet, cooking for about 5 minutes on each side until they are browned and cooked through. They should still be slightly pink in the center.

      Stir in the fresh thyme, Dijon mustard, and optional heavy cream. Season with salt and pepper. Cook for an additional 2 minutes, allowing the flavors to meld. Remove the skillet from heat and let the mixture cool slightly.

        Using a food processor or blender, pulse the liver mixture until it reaches a smooth, pâté-like consistency. Adjust seasoning if necessary.

          In a separate skillet, toast the slices of bread in the remaining butter until golden brown on both sides.
