Ingredients
  

1/4 cup fresh lemon juice (about 2 large lemons)

1/2 cup extra virgin olive oil

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup (for a vegan option)

1 clove garlic, minced

Salt and freshly ground black pepper, to taste

Optional: 1 tablespoon finely chopped fresh herbs (like parsley or basil)

Instructions
 

In a small mixing bowl or a jar with a lid, combine the fresh lemon juice, Dijon mustard, honey (or maple syrup), and minced garlic. Whisk or shake vigorously until well mixed.

    Gradually add the extra virgin olive oil while whisking continuously to emulsify the dressing. If using a jar, just add all the ingredients, close the lid tightly, and shake until combined.

      Season with salt and freshly ground black pepper to taste. If desired, stir in chopped fresh herbs for added flavor.

        Taste and adjust the sweetness or acidity by adding more honey or lemon juice as needed.

          Serve immediately, or store in the refrigerator for up to a week. Shake well before using.
