Lemon Ginger & Coconut Granola

Ingredients
  

3 cups rolled oats

1 cup unsweetened shredded coconut

1/2 cup sliced almonds (or your favorite nuts)

1/2 cup pumpkin seeds

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted

Zest of 2 lemons

1 tsp ground ginger

1/2 tsp cinnamon

1/2 tsp salt

1/2 cup dried cranberries or raisins (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, sliced almonds, pumpkin seeds, ground ginger, cinnamon, and salt. Mix thoroughly until well combined.

      Prepare the Wet Mixture: In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, and lemon zest until emulsified.

        Combine Ingredients: Pour the wet mixture over the dry ingredients and stir until all ingredients are evenly coated. If using cranberries or raisins, fold them in at this stage.

          Spread and Bake: Spread the granola mixture evenly onto the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, stirring halfway through to ensure even browning. The granola should be golden brown and fragrant.

            Cool Down: Remove from the oven and let the granola cool completely on the baking sheet. It will continue to harden as it cools.
