Tossed in a zesty homemade lemon-garlic dressing, it’s a delightful blend of flavors. Add toasted pine nuts for crunch and optional nutritional yeast for a cheesy kick. Ingredients
  

8 oz whole grain pasta (any shape you prefer)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1 cup fresh basil leaves, chopped

1/4 cup pine nuts, toasted

1/3 cup extra virgin olive oil

Zest and juice of 1 large lemon

2 cloves garlic, minced

Salt and pepper, to taste

Optional: 1/4 cup nutritional yeast (for a cheesy flavor)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Veggies: While the pasta is cooking, chop the cherry tomatoes, cucumber, and red onion. Place them in a large mixing bowl.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper. If using nutritional yeast, add it to the mixture to enhance the flavor.

        Combine Ingredients: Once the pasta has cooled, add it to the bowl with the chopped vegetables. Pour the dressing over the top and gently toss everything to combine evenly.

          Add Basil and Nuts: Fold in the chopped basil and toasted pine nuts, mixing well to ensure the basil and nuts are evenly distributed throughout the salad.

            Chill and Serve: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature.
