1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

For the Lemon Filling:

1 cup granulated sugar

3 large eggs

Zest of 2 lemons

1/2 cup freshly squeezed lemon juice

1/4 cup all-purpose flour

1/2 teaspoon baking powder

For the Fresh Flavor Boost:

1/4 cup fresh mint leaves, finely chopped

Powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

    Make the Cookie Base: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.

          Spread the Base: Press the cookie dough evenly into the bottom of the prepared baking dish. Bake for 15 minutes, or until lightly golden. Remove from the oven and allow it to cool slightly.

            Prepare the Lemon Filling: In another bowl, whisk together the sugar and eggs until well combined. Add lemon zest, lemon juice, flour, and baking powder, mixing until smooth.

              Add Fresh Flavor: Stir in the finely chopped mint leaves to the lemon filling mixture. This will enhance the citrus flavor with a refreshing twist.
