2 large potatoes (Yukon Gold or Russet)

1 cup shredded mozzarella cheese

1/4 cup all-purpose flour

1/4 cup finely chopped green onions

1 large egg

1 teaspoon garlic powder

Salt and pepper to taste

Vegetable oil (for frying)

Prepare the Potatoes: Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

    Mix Ingredients: In a large mixing bowl, combine the grated potatoes, shredded mozzarella cheese, all-purpose flour, chopped green onions, egg, garlic powder, salt, and pepper. Mix everything until well combined. The mixture should be thick and hold together.

      Heat the Pan: Heat a non-stick skillet over medium heat. Add a few tablespoons of vegetable oil, enough to coat the bottom of the pan.

        Form the Pancakes: Once the oil is hot, scoop about 1/4 cup of the potato mixture into the pan. Flatten it gently with the back of a spatula to form a pancake about 1/2 inch thick. Repeat with remaining mixture, ensuring not to overcrowd the pan.

          Cook Until Golden: Fry the pancakes for about 4-5 minutes on each side or until they are golden brown and crispy. Adjust the heat if necessary to prevent burning.

            Drain Excess Oil: Transfer the cooked pancakes to a plate lined with paper towels to absorb excess oil.
