1 cup all-purpose flour

1/2 cup water

1/2 cup shredded mozzarella cheese

1/4 cup chopped scallions (green onions)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder (optional)

1 large egg

Oil for frying

In a large mixing bowl, combine all-purpose flour, water, salt, black pepper, and garlic powder. Whisk until the batter is smooth and lump-free.

    Fold in the shredded mozzarella cheese and chopped scallions until they are evenly distributed throughout the batter.

      Heat a non-stick skillet over medium heat and add a thin layer of oil.

        Once the oil is hot, pour about 1/4 cup of the batter into the skillet, spreading it out slightly to form a pancake.

          Cook for about 3-4 minutes until the edges look set and the bottom is golden brown.

            Carefully flip the pancake and cook for an additional 2-3 minutes on the other side until it is golden and the cheese is melted.

              Remove from the skillet and repeat the process with the remaining batter, adding more oil to the skillet as needed.

                Serve the pancakes hot, either plain or with a dipping sauce of your choice, like soy sauce or a spicy sauce.
