Keto Chicken Divan

Ingredients
  

2 cups cooked chicken, shredded or diced

4 cups broccoli florets (fresh or frozen)

1 cup heavy cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded sharp cheddar cheese (divided)

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (for garnish)

Optional: 1/4 cup sliced almonds or crushed pork rinds (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Broccoli: If you're using fresh broccoli, steam or blanch the florets until they are bright green and just tender, about 3-5 minutes. If using frozen, just thaw them.

      Mix the Chicken Filling: In a large bowl, combine the cooked chicken, steamed broccoli, heavy cream, garlic powder, onion powder, salt, black pepper, half of the cheddar cheese (1/2 cup), and half of the Parmesan cheese. Stir until well combined.

        Assemble the Dish: In a 9x13 inch baking dish, spread the chicken and broccoli mixture evenly.

          Add Cheese Topping: Sprinkle the remaining cheddar cheese and Parmesan cheese evenly over the top of the mixture. If desired, add sliced almonds or crushed pork rinds for an extra crunch.

            Bake: Drizzle olive oil over the top for added moisture and flavor. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

              Garnish: Remove from the oven and let it cool slightly. Sprinkle with paprika for color before serving.

                Serve: Enjoy warm, either as a main dish or with a side salad for a complete keto meal.
