8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, chopped

1 bell pepper (red or yellow), diced

1 teaspoon Jamaican allspice

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup coconut milk

1/2 cup heavy cream

1/4 cup fresh lime juice

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Optional: lime wedges for serving

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the minced garlic and chopped onion, sautéing until translucent (about 2-3 minutes).

      Add Bell Peppers & Spices: Stir in the diced bell pepper, Jamaican allspice, paprika, and cayenne pepper. Cook for another 2-3 minutes until the peppers soften.

        Cook the Shrimp: Add the shrimp to the skillet and cook until they turn pink and opaque (about 3-4 minutes). Season with salt and pepper to taste.

          Make the Creamy Sauce: Reduce the heat to medium-low and pour in the coconut milk and heavy cream. Stir gently to combine and let simmer for about 5 minutes, allowing flavors to meld.

            Combine Pasta and Sauce: Add the cooked fettuccine to the skillet, tossing to coat the pasta in the creamy shrimp mixture. Drizzle with fresh lime juice, and adjust seasoning if necessary (salt and pepper).
