4 slices brioche bread

2 large eggs

1/4 cup milk

1 tsp vanilla extract

1/4 tsp cinnamon

1/4 cup jam (your choice of flavor)

1/4 cup powdered sugar (for dusting)

Butter (for cooking)

Optional: additional jam for serving

Instructions
 

In a mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

    Heat a skillet or griddle over medium heat and add a small pat of butter, allowing it to melt and coat the surface.

      While the skillet is heating, take each slice of brioche and spread a thin layer of jam on one side. Top with another slice to create a 'sandwich'.

        Dip each jam-filled sandwich into the egg mixture, coating both sides well.

          Once the skillet is hot, place the coated sandwiches on the skillet and cook for about 3-4 minutes on each side or until golden brown and crispy.

            Remove the French toast from the skillet and dust generously with powdered sugar.

              Serve warm with additional jam on the side for dipping, or drizzle on top if desired.
