Jalapeno Popper Stuffed Meatballs

Ingredients
  

1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

4 oz cream cheese, softened

1/2 cup shredded cheddar cheese

2-3 fresh jalapenos, seeded and finely diced

1/4 cup green onions, chopped

1/2 cup barbecue sauce (for glazing)

Instructions
 

In a large mixing bowl, combine the ground beef and ground pork. Mix in the breadcrumbs, grated Parmesan cheese, egg, garlic powder, onion powder, smoked paprika, salt, and black pepper. Combine until just blended; do not overmix.

    In a separate bowl, mix the softened cream cheese, shredded cheddar cheese, diced jalapenos, and chopped green onions until well combined.

      Preheat your oven to 400°F (200°C).

        Take about 2 tablespoons of the meat mixture and flatten it in the palm of your hand. Add about 1 tablespoon of the jalapeno cheese mixture in the center, and then carefully fold the meat around the filling to create a ball. Ensure the filling is completely enclosed. Repeat with the remaining meat and filling.

          Place the stuffed meatballs on a baking sheet lined with parchment paper, making sure they are spaced out.

            Brush the tops of the meatballs with barbecue sauce for added flavor and moisture.

              Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and have reached an internal temperature of 160°F (70°C).

                Optional: For an extra crispy finish, broil for the last 2-3 minutes to get a golden crust.
