1 pound pork tenderloin, cut into bite-sized pieces

1 cup fresh peaches, diced (or canned peaches, drained)

2 fresh jalapenos, seeds removed and finely chopped

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon black pepper

1 tablespoon olive oil

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions
 

Prepare the Marinade: In a medium bowl, mix the soy sauce, honey, apple cider vinegar, garlic powder, smoked paprika, black pepper, and grated ginger. Stir until well combined.

    Marinate the Pork: Add the bite-sized pieces of pork tenderloin to the marinade. Mix well, ensuring all pieces are coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Cook the Pork: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the marinated pork pieces. Cook for about 4-5 minutes until browned on all sides and cooked through (internal temperature should be 145°F or 63°C).

        Add Peaches and Jalapenos: Add the diced peaches and chopped jalapenos to the skillet, stirring gently to combine. Cook for an additional 2-3 minutes until the peaches are warmed through and slightly caramelized.

          Serve: Remove from heat and transfer the pork bites to a serving platter. Garnish with fresh cilantro if desired and serve with lime wedges on the side for an extra zing.
