2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/2 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 medium apples, peeled, cored, and finely diced (preferably Granny Smith or Honeycrisp)

1/2 cup chopped pecans or walnuts (optional)

1/4 cup brown sugar (for topping)

1 teaspoon cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg (if using), and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.

          Add Apples and Nuts: Fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

            Fill Muffin Tins: Using a scooper or spoon, divide the batter evenly among the muffin cups, filling each about 2/3 full.
