Ingredients

2 cups rolled oats

2 cups unsweetened almond milk (or your preferred milk)

2 medium apples, peeled, cored, and diced

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup raisins or dried cranberries (optional)

Fresh apple slices for topping (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

Mix Wet Ingredients: In a large mixing bowl, combine the almond milk, maple syrup, and vanilla extract. Stir well to incorporate.

Add Oats and Spices: To the wet ingredients, add the rolled oats, ground cinnamon, nutmeg, baking powder, and salt. Mix until everything is evenly combined.

Incorporate Apples: Gently fold in the diced apples, walnuts or pecans (if using), and raisins or cranberries (if using) into the oatmeal mixture. Ensure the apples are well distributed.

Transfer to Baking Dish: Grease a 9x9 inch baking dish (or similar size) and pour the oatmeal mixture into the dish, spreading it evenly. Optionally, top with fresh apple slices for added aesthetics and flavor.

Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is slightly golden and the oatmeal is set.

Cool and Serve: Once baked, remove from the oven and let it cool for a few minutes. Cut into squares and serve warm, drizzled with a little extra maple syrup if desired.
